Topics include fruit selection, juice extraction, fermentation, yeast culture management, clarification, filtration, maturation, blending, bottling, pasteurization, and quality evaluation. Physicochemical and microbiological aspects necessary for producing high-quality wine are also included.

Participants will receive training in Good Manufacturing Practices (GMP), Good Hygiene Practices (GHP), and quality assurance. Guidance will be provided on establishing and operating small and medium-scale wineries. Vice-Chancellor Prof. H.S. Baveja stated that this course is an effective means to increase farmers' income and create livelihoods in hilly regions.
